When life gives you apples, make apple pie. No need to turn on the stove to make this raw, vegan dessert. {good at breakfast time too!}
Crust
- 2 cup almonds
- 2 cups pitted Medjool dates
- 1 teaspoon sea-salt
Syrup
- 1/2 cup Medjool dates
- 1 orange pitted and seeded
- 1/4 cup water
Filling
- 5 to 6 apples peeled and thinly sliced
- 1 cup raisins or dried cranberries
- 2 tablespoons ground cinnamon
Pulse the almonds in the food processor until they form a coarse meal. Add the pitted dates and the sea salt process until the mixture comes together into a cohesive dough. Press the dough into a oiled pie plate {you can oil the pie plate with coconut oil to prevent crust from sticking} and store in the freezer while you prepare the filling.
Process the orange and in the food processor or high powered blender until it is pureed. Add the dates and process again until smooth.
Place the peeled and cored apples and cinnamon into a large bowl, pour the syrup mixture and dried fruit over it, and carefully toss until apple slices are thoroughly coated. Layer the syrup-covered slices into the prepared crust. Serve immediately or refrigerate for later! YUM.
