We are new to the Southside CSA and enjoying it immensely. We are trying to eat especially healthy as I’m expecting our first baby in October. Here are two recipes we made from our produce this week.
Sautéed Bok Choy, Rice with Tomatillo Sauce, Squash & Fresh Fish
We had tomatillos from two CSA pick-ups which my husband roasted and pureedwith roasted garlic, cilantro and lime. This was a great sauce on the rice — garnished with the roasted jalapeno and serrano peppers. The squash was roasted with olive oil, paprika and parmesan. The fresh bok choy was sautéed. The outstanding yellow fin flounder was purchased from Marlow & Daughters. This was a perfect dinner to start out the Labor Day weekend!
Corn, Peaches & Tomatoes over Polenta
We made a basic creamy polenta recipe. On top we added:
- 2 chopped tomatoes
- 2 ears of corn cooked and kernels cut from cob
- 2 peaches peeled, pitted and chopped
- Chopped basil
Mix these ingredients with some olive oil, salt and pepper (onions and mozzarella would probably add to the deliciousness). Refrigerate for a little bit and pour onto polenta. This is a really delicious salad, especially with the fresh CSA produce
