This recipe comes from Evan and has inspired me to track down some mussels asap!
Fried Zucchini Blossoms stuffed with Mussels
- Prepare batter; Mix flour water and bit of salt to make fairly thick batter like pancakes.
- Heat Extra Virgin Olive oil, garlic, & onion w/ lil hot red pepper & salt in sauce pan. Get very hot and add about 1/4 to 1/2 bottle cheap white wine. Throw in scrubbed debearded mussels. Med high flame to boil…Mussels should open in about 5 minutes.
- Gently stuff mussels inside flowers. Note. Evan didnt wash them but you can gently! Dab with paper towels though. Cover with batter generously.
- In frying pan fill with vegetable oil about 3/4 inch. Get hot. Gently put flowers with tongs into oil..3 at a time so temp stays hot. Be careful of mad splatterin oil! When nice and golden, flip and do other side.
That’s it! Now you have an absolute delicacy worthy of the fanciest restaurant right in your own kitchen. Muchas Gracias to Evan for sharing this delicioso recipe. Keep ’em coming people!
